Thai Chicken Pizza

This is actually Reese's recipe but it is one of my favorites. It is so delectably good I can hardly handle it. Enjoy!  


Thai Chicken Pizza



Thai Peanut Sauce
Pizza crust
Mozzarella cheese
Crushed peanuts
Bean sprouts
Cilantro
Shredded carrots
1 Chicken breast cooked in thai sauce

Alice's Carbonera

I had a friend from northern Italy who spent some time in our home in high school. My dad wanted her to teach us a recipe from her home. She taught us this and we love it!

4 eggs
Parmesan Cheese
bacon or cubed ham(don't be shy with it)
2 T olive oil
1 lb spaghetti

Cook spaghetti according to package directions. Fry ham or bacon in a large pan, use oil if using ham. Beat eggs and add Parmesan until it forms a thick batter about the consistency of yogurt. Add spaghetti and egg mixture, fry until egg is cooked through.

Elaine's "Molly" Tortellini Toss

In my quest to become more "Molly" I have made it my goal to make as many of Elaine's dishes as I can. So if you would like to become more "Molly" you will for sure need to give this one a try.


1 Garlic Clove minced
¼ c Butter
1 ½ lb Chicken cut in strips
½ tsp Lemon Pepper
¼ tsp Marjoram
1 tsp Salt
1 tsp Basil
Snow peas
16 oz. Tortellini cooked
Parmesan cheese

In a large skillet, saute garlic in butter until tender. Add meat and seasonings; cook and stir for 5-7 mins or until meat is no longer pink. Add veggies; reduce heat. Cover and simmer for 2-3 mins or until heated through. Add the tortellini and Parmesan cheese; toss to coat.

Eskimo Bars

(Don't ask me why they are called that)

1 3/4 cup sugar
1 cup butter
3 cups flour
1 can pie filling (whatever sounds good)
1 t vanilla
1/2 t almond extract
4 eggs
1/2 t baking powder

Grease and flour cake pan. Combine all ingredients except pie filling in large mixing bowl. Press half the dough into bottom of pan. Cover with pie filling. Dot rest of dough on top by teaspoons. Leave some pie filling showing so it looks fabulous when cooked! Bake at 350 for 20-25 minutes. Delicious!

Peanut Butter Popcorn

1 cup Karo Syrup
1 cup sugar
1 cup peanut butter
1 t vanilla
2 bags microwave popcorn

Pop popcorn and separate from unpopped kernels.
Bring Karo syrup and sugar to a boil, add peanut butter and vanilla. Allow to boil for a minute, stirring constantly, but do not scorch! Pour over popcorn and stir! Enjoy!
